Saturday Share Recipe - Summer Squash Fry

When I was a kid, my Dad planted a huge garden every summer. When the Yellow Crookneck Squash started producing, we had enough to supply the entire neighborhood.

My Mom always cooked that delightful yellow squash, called Summer Squash by many, and made it so delicious that there were never any leftovers. We always preferred yellow squash over zucchini.

My husband's grandmother cooked squash in a similar fashion with a few additions that gave it added texture and flavor. Next week, I'll give Granny Smith's recipe.

But today, I'll tell you how my Mom cooked it and made it so delicious. Serves 6-8.

SUMMER SQUASH FRY

Ingredients

  • 2 pounds of yellow squash, sliced in rounds
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 strips of bacon
  • 1 small bell pepper, any color, diced
  • 1 medium to large onionm diced
Directions
1. Fry the bacon until crisp, remove to a paper towel and crumble the bacon.

2. In the fat that was rendered from the bacon, saute the bell pepper and onion until translucent. Remove and save to add back in a bit.

3. Add the sliced squash to the pan and stir fry over medium to high heat until the squash is softened. 
Add the bell pepper and onion back to the frying pan and continue cooking so that the onion begins to caramelize. Sprinkle with salt and black pepper to taste.

4. Add the crumbled bacon to the squash. Serve hot.

Saturday Share Recipe - Summer Punch

Summer is when outdoor parties reign supreme. Having something icy cold and easy to serve and drink for all ages means making a punch packed full of tasty ingredients.

This SUMMER PUNCH meets all those requirements, and it's easy to make and easy to store which means you can always have it saved in the fridge.

Ingredients

  • 1 6-ounce can frozen pineapple juice
  • 1 6-ounce can orange juice
  • 1 6-ounce can frozen berry & fruit blend juice
  • 1 2-liter bottle of ginger ale
  • Orange chunks, fresh berries, fresh mint leaves to garnish
Directions

1. Combine juices in a large pitcher and stir to blend well.
2. Cover and chill in the fridge overnight.
3. If you plan to serve from a punch bowl, pour the chilled mixture into the bowl and add the ginger ale, pouring slowly to preserve the fizz..
4. If you're serving from the pitcher, add the ginger ale as described in the previous step.
5. Ganish with the fresh fruit.

By the way, almost any fruit juice and fresh fruit works for this recipe.

If you have any leftover, simply store in a covered container in the fridge. It may go a little flat, but it will still taste good.

PUNCH BOWL TIP

Here's an easy way to keep the punch, whether in a pitcher or a punch bowl, icy cold.

Freeze a mixture of fruit juice in a bowl or a ring mold if you have one. Place the frozen juice into the punch bowl to keep the mixture icy cold. That won't dilute the flavor of the punch the way ice cubes will.

7 Ways to Build Your Social Media Audience

I never thought about this before!
Building an audience for Facebook, YouTube, LinkedIn, etc. is about the same as building one for a Blog.

Any social media activity from Blogging to TikTok should be fun. If it's not fun, change something in your approach.

Also, your audience should grow each month. If it's not, then it's time to shake things up a bit.

I haven't talked much about blogging lately. I thought BLOG OPS, the book I wrote and published about the subject, said everything. (The book is in KU or sells for $3.99.)

But I realized that what I said about blog audiences also applies to the other social media platforms too.

For instance, try this which was originally written about blogging, but which can be adapted to virtually any social media.

7 Ways to Build Your Social Media Audience

1. Post often to the social media platform you've chosen as yours.

2. Comment on other accounts in the same platform. Your name/link is there for anyone to click and learn about you and your social media account.

3. Join a group account like RomanceGems...Where Authors and Readers Meet, the facebook group to which I belong. 

The burden of posting every single day is removed since there are many in the group with a date assigned to each. You get exposure and a chance to build an audience probably larger than you can do individually.

4. Always interact with your social media visitors. If in a group blog, be sure to support the other authors, Like and Share their posts, and comment on their posts as well as the visitors who leave comments.

5. Change your banner image at least every 3 months. That will keep your Facebook, etc. page looking fresh.

6. Try to engage your audience by asking questions, offering prizes occasionally for specific actions, and always use a clear call to action.

7. Be yourself and share from the heart.

Saturday Share Recipe - Brandied Steak Sauce

This has been a rainy week, and our Memorial Weekend is following that trend.

We'd planned a barbeque with Darling Hubby's famous BBQ Drumsticks, but it looks as if we'll be grilling indoors instead.

That means Flat Iron Steaks with Brandied Steak Sauce. You make this with drippings in the pan from cooking the steaks.

This homemade steak sauce is great on beef steaks or pork chops and can dress up hamburger steak too.

Make a batch and store it in the fridge or freezer until needed. Heat before serving.

BRANDIED STEAK SAUCE

Ingredients

1/2 cup very finely diced onion or shallots

1/2 cup of brandy

1/2 cup of rich beef stock

1 tablespoon Worcestershire Sauce

1 teaspoon Dijon mustard

Salt and Black Pepper to taste

Directions

1. When the steaks are finished cooking, place them on a platter in a draft-free space for about 10 minutes to allow the meat juices to settle.

2. Pour the drippings from the skillet, leaving about a tablespoon left in the pan. Toss the onions into the pan and saute until soft. Do not brown the onions.

3. When the onions are soft, reduce the heat, and carefully add the brandy. You don't want to flame the onions. Simmer about five minutes until the alcohol volatilizes. You don't want that "raw" brandy taste.

4. Add the Dijon mustard, Worcestershire sauce, and beef stock. Whisk well. Reduce the heat to low and simmer. 

5. Serve warm with the steaks.

Option. Before serving, when the sauce has thickened a little, add a bit of finely chopped fresh tarragon or fresh thyme leaves to finish. Then pour over the steaks.

Saturday Share - Chef Mama's Beef Stock

Who is Chef Mama? That would be my Mom who was an amazing home chef. She had family recipes, contemporary fad recipes, and cookbooks from churches as well as the most popular ones of her era.

She never watched a chef teach how to make something in a video or anything like that, but her food was amazing.

She made stock in her kitchen, and she didn't call it bone broth. It was called stock, and it smelled so good and tasted so good, you wanted to drink it.

Today, I want to tell you how she made beef stock to produce a liquid that would make gravies, sauces, and soups mouthwateringly delicious.

You'll need a roasting pan and a large stock pot or Dutch oven, and you'll need what were once called soup bones.

Mom used real beef trimmed from roasts as well as soup bones which could be bought for cents a pound. 

In today's world when short ribs cost $9.99 a pound, just look for the cheapest bone-in beef you can find. If you frequent a butcher shop, you can probably get soup bones from them.

You'll also need celery, onion, carrots, salt, and herbs. I do like my mother. When I cook with those vegetables, I wash and trim them then save the trimmings in a big container in the fridge for the sole purpose of making stock.

CHEF MAMA'S BEEF STOCK

Ingredients

  • 2 1/2 pounds meaty beef bones
  • 1/4 cup olive oil
  • 10 cups of cold tap water
  • the equivalent of 2 celery staoks, 2 carrots, 1 onion, all coarsely chopped
  • a bouquet garni which is usually a bundle of herbs placed in a cheesecloth square and tied together. Use 2 sprigs each of fresh thyme and marjoram, 6 black peppercorns, 6 sprigs fresh parsley, and  bay leaf.
  • 1 teaspoon of salt

  • Preheat oven to 350º F. (180º C.).
  •  Place the soup bones in a roasting pan and drizzle with the oil.
  • Bake for 1 hour or until the bones are well browned.
  • Remove from the oven and transfer everything to a Dutch oven or stock pot. Add the cold watr and all the other ingredients.
  • Turn the heat to high and bring everything to a boil.
  • Reduce the heat to a simmer and cook uncovered for 3-4 hours.
  • Skim any impurities that rise to the top of the simmering stock.
  • At the end of the cooking time, remove the soup bones. If there's any meat on them, reserve it for use later. Discard the bones.
  • Strain the stock throough cheesecloth or a fine sieve and discard the bouquet garni and veggies.
  • Chill at least 24 hours before using the stock.
  • Fat will accumulate on the top of the stock. You can scoop this fat off and use as you would use butter, shortening, or cooking oil. If the source of the bones was organic, this fat is very healthy. Saute vegetables in it, use to make roux, sauces, etc.

I make stock on a weekend. After it's chilled and I've removed the fat, I pour it into quart-sized freezer containers, mark the date, and stack the containers in the freezer so I'll always have this quality ingredient on hand.

Saturday Share - Baked Potato Casserole

Does this describe your daily routine? You work all day then it gets late, and you realize you need to cook dinner.

That's when you get that sinking feeling of "I'm too tired to cook" and all you want is an easy way out.

What can you cook?

If you have potatoes ad cheese, then there's an easy casserole you can cook that will get rave reviews.

In fact, if your family loves mashed potatoes, this will become a family favorite casserole. Even better, if you have leftover ham or roast beef, you can dice that and add it to the casserole.

Today's recipe makes 6-8 generous servings.

BAKED POTATO CASSEROLE

Ingredients

  • 8 medium size potatoes (about 2 1/2 to 3 pounds if you want to weigh them)
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups shredded chedddar cheese + 1/2 cup shreded cheddar, separately
  • 6 slices bacon, fried, drained, and crumbled
  • Chives for garnish
Directions

1. Peel the potatoes. Place in a laarge saucepan and cover with water. Sprinkled in a couple of teaspoons of salt. Cook over medium-high heat about 15-20 minutes until fork tender. Drain and set aside.

2. While potatoes are cooking, preheat the oven to 350°F (176°C). Prepare a 3 quart casserole dish with baking spray, butter, or neutral oil

3.  Return the potatoes to the saucepan, add the milk, sour cream, salt, and pepper. Beat with a hand-held mixer until smooth.

4. Stir in 1 1/2 cups of cheese and half of the bacon. Then spread the mixture into the casserole dish.

5. Bake 20 to 25 minutes. Remove from oven and sprinkle with the 1/2 cup of cheese and the rest of the bacon. Bake an additional 5 minutes until cheese is melted and bubbly.

This website app is more than just a meal planner. Eat This Much creates personalized meal plans based on your food preferences, budget, and schedule. It can help you reach dietary and nutritional goals with their calorie calculator, weekly meal plans, grocery lists and more.

You can use it to create 3 meals a day based on the amount of  calories you want to consume—carbs, fat, etc. The FREE Forever level allows you to generate daily meals plans, track what you eat, add foods from barcodes, and create custom foods and recipes. 

You can click Generate, copy the meal plan, click ti again to get another meal plan, etc. until you have 7 days of meal plans.

There is also a Premium level for $5.00 a month if you want to unlock extra options, and a Professional level with a price that varies.

Monday Magic - Landscape Design App

Spring is coming, and I'm excited that gardening season is here again.

Every spring I make plans to finish landscaping the front and back yards, but I never quite get it done the way I like it.

Darling Hubby gets frustrated because I'm always changing the plan so this year, I thought I'd do something different.

I searched online and found a few free landscape design apps. I thought I'd post about them so you can try them along with me.

First up is Neighborbrite, an AI powered landscape design app that is always free to use unless you decide to upgrade to the pro version for more control and custumization for plant types, placements, and some other features. 

HOW IT WORKS

Neighborbrite uses advanced AI technology to help you design. Upload a photo of the outdoor space  you want to design, choose a garden style, and get design ideas for your space.

That's it. There's nothing to download and install since it's an online site to use. You don't need any special tech skills or knowledge because it's designed to be user-friendly and intuitive.

Saturday Share Recipe - Savory Bread and Corn Pudding

I bought some fresh corn on the cob yesterday with the thought of boiling some to serve on the cob.

The rest I'll use to make this Savory Bread and Corn Pudding, a delicious hot, cheesy casserole that's hearty, and it serves 8.

Ingredients

  • 8 cups stale bread, preferably a rustic bread, crust on, cut or torn into half-inch cubes (usually takes about a pound of bread)
  • 3 cups whole milk
  • 2 cups grated Gruyere cheese
  • 5 eggs
  • 1/4 cup (4 tablespoons) butter + 1-2 teaspoons to butter the casserole dish)
  • 1 1/2cups fresh corn kernels (usually 2-3 ears of corn)
  • 1 tablespoon fresh rosemary, chopped (if you use dried herbs for these fresh ones, use half the amount)
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

  • Directions

    1. Cut or tear the bread into cubes.
    2. Grate the Gruyere.
    3. Beat the eggs.
    4. Clean the corn and cut the corn off the cob.
    5. Preheat oven to 375° F. (190° C.) and use the 1-2 teaspoons of butter to prepare a 9x13 casserole dish.
    6. In a saucepan, heat the milk, fresh chopped herbs, and black pepper until the milk begins to simmer. turn the heat off and let the mixture cool.
    7. In a large skillet, heat the butter, stirring constantly until the milk solids begin to brown which takes about 4-5 minutes. 
    8. Add the corn kernels and salt and stir over low heat about 2-3 minutes. Remove from the heat and set aside to cool.
    9. In a large bowl, whisk the eggs well then stir in the cooled milk and mix well. Then stir in the bread, the cheese, and the corn mixture. Blend well.
    10. Pour the mixture into the prepared baking dish. Press down on the bread to make sure it's submerged in the batter. Let the dish set for 30 minutes until the bread absorbs the liquid.
    11. Bake for 15 minutes then rotate the dish and back 20 minutes until golden brown.
    12. Serve to acclaim!

    Saturday Share - Brunch Quiche Cups

    Today's recipe is packed with protein and is great for breakfast or brunch.

    Brunch Quiche Cups

    Ingredients

    • 1 10-ounce package of frozen chopped spinach
    • 4 eggs
    • 3/4 cup sharp cheddar, grated
    • 1/4 cup finely diced red bell pepper
    • 1/4 cup finely diced onion
    • 1 tablespoon butter
    • 1/2 teeaspoon salt
    • 1/4 teaspoon ground black pepper
    •  1/4 cup diced ham or crumbled bacon *Optional

    Directions

    1. In a 12 cup muffin pan, line each cup with a foil baking cup and pre-heat the oven to 350° F. (176° C.).

    2. In a small saute pan, saute the red bell pepper and the onion in the butter until soft.

    3. Microwave the spinach on high for 2-3 minutes. Drain the spinach well and squeeze all the liquid out of it.

    4. In a large mixing bowl, beat the eggs well. Add the cheese, spinach, onions, bell pepper, salt, and pepper. If you are adding meat, toss it in now.

    5. Evenly divide the mixture into the 12 muffin cups.

    6. Bake for 20 minutes, until a knife inserted into the center comes out clean.

    7. Serve immediately.

    You can make these ahead of time and reheat in a microwave. Store any leftovers in a plastic storage bag in the freezer.

    6 Quick Tips Identify Scams

    If you're like me, your email Inbox is inundated on a daily basis with scam, spam, spoof, and AI bot mail.

    I'd say about 99.99% of that is designed to steal your identity and/or your money—probably both.

    6 QUICK TIPS IDENTIFY SCAMS

    1. Always be suspicious of anything that insists you act now. The only acting you should do is thinking and figuring out if it's a scam.

    2. Fake messages like from the post office or an online business claiming there is a problem with your delivery or your account. The post office will NEVER send you an email unless you have signed up for USPS alerts, and if you have, you'll know exactly what those alerts look like. 

    If you know you have never ordered anything or bought anything from the "business" trying to contact you, send that email to the junk folder.

    3. Third-party social media posts and ads with a deal that seems too good to be true. Never click on the link. If you're interested in the item, go directly to that company's website and check it out.

    AND STOP SCAMS!!
    Always remember, anything too good to be true is never true.

    4. Never click on anything—even in "white" space of an email—no matter who it is from that asks for your password, the last 4 of your social security number, your birthdate, or any basic vital personal information that could be used to compromise you and your privacy.

    If it's something that involves a credit card that you have, call the phone number on the back of the credit card and tell them why you're calling. Same thing with your bank and any other place that involves your money and savings.

    Why not click on a place in the email that's just white space? Because that white space may content a hyperlink in white text. By clicking at a random spot on a scam email, you just might be sending your computer information to the crooks.

    5. If you get a phone call from an unfamiliar number, let it go to voice mail. If no voice mail is left, it's probably a scam artist.

    6. Since so many people order from Amazon, just be assured that Amazon will never email you or call you regarding your order or to verify anything about the order. All communication for Amazon orders goes through your Amazon account portal.

    26 for 2026 - Change Your Life - Part 2

    Welcome back.

    Did Part 1, 26 for 2026, Change Your Life, speak to you?

    I hope you found one or two of the suggestions compelling. If you did, take action, no matter how small the first step may be.

    We are all a work in progress, but that doesn't mean we can't be happy right now. I'm happy. I think happiness is a choice. God knows I've had plenty of reasons not to be happy, but that's another story.

    Wanting to change means that I recognize there are things—call it systems—that could serve me  better. I've learned that, and that's what I want to share. Here are the rest of the 26 suggestions.

    Part 2, 26 for 2026, Change Your Life

    14. If you want to succeed faster and be more satisfied with life, find someone who is doing exactly that. Are they compassionate, smart, friendly, hard working, and successful? If so, learn what they're doing and how they're doing it. What do they know that you need to know. Model their behavior. Find out how all the details of how they did it and adapt their method to your efforts.

    15. Avoid modeling the behavior of people who got what they want by dishonesty. Never change your morals and beliefs to be like someone else. You can't model negative behavior without it having far-reaching consequences in your life.

    16. Integrity—honesty in all things and strong moral beliefs—is everything in business and in your personal life. Make that a core belief.

    17. Learn the difference between working hard and working effectively. Working effectively often means learning how to prioritize your tasks so you get better results, accomplish more, and feel more fulfilled.

    18. Analyze how you spend your working hours. Are you actually being productive or just giving lip service to the idea of working hard? When you're supposed to be working, are you sneaking in time on your cell phone? Seeing Facebook updates or the latest TikTok video? Be honest in your assessment.

    19. Change your attitude about work. Sometimes when we describe an activity as work, even though it's something we truly adore doing, the activity, in our mind, becomes linked to work =  unpleasantness. The more you enjoy something; the less it will seem like work.

    20. If you're in a job you truly hate, then make a plan on how to change that situation. What interests you? What kind of job do you think you'd enjoy? Does it require retraining or more education? 

    Figure out exactly what it takes to qualify for that job. Break it down into steps. Then take action. Don't be daunted by how long it will take to be qualified. Start now. Quit dreaming about it. Make it happen. You can do it. Believe you can. I believe you can. Planning, action, persistence, and belief can make dreams come true.

    21. Enjoy yourself more. Too many people have lost the capacity for the simple pleasures in life.  They rush from one thing to another and say they're relaxing when they're watching YouTube or television or checking social media. None of those things will give you the kind of  relaxation you need. 

    Instead of being glued to your phone or social media, talk to the people in your household. If you're living alone, talk to a friend or family member who's away—not texts but by voice. Be connected in a real way.

    22. Take up a hobby or a sport. A hobby can range from playing board games, putting together jigsaw puzzles, crafting, cooking, gardening, wood working—the sky is the limit.

    Try a sport even if it's walking every day, but there's also bowling, tennis, ping pong, archery, cycling, exercising, etc. Just about all of those mentioned can be done interacting with others. Find something stimulating and interesting to do outside of work that connects you with others in some way. That will give you a good balance between hard, effective work and play.

    23. Laugh more. Nothing lifts the spirits like humor. It may sound silly, but if you're feeling pessimistic and discouraged, smile. Really. Smiling uses muscles and activates an endorphin release in the brain that makes you feel good.

    24. Listen to music more often but choose wisely the kind of music. Abstain from music that insults or demeans others. Find music that lifts the human spirit and makes you feel good. That kind of music can be found in any genre from Mozart to pop music.

    25. Read more. I'm not just saying that because I'm an author. Reading expands your horizon, improves your vocabulary, changes the way others see you, educates, entertains, and makes you think. In addition to all that, reading can prevent mental decline, lower blood pressure, and improve your emotional state. 

    26. Take to heart the old advice, "You are what you eat." Most of the diseases that plague the modern world can be prevented by healthy habits. Avoid a steady diet of food loaded with sugar, salt, bad fat, and no fiber. Eat real food. It's good for your body, your brain, and your emotions.

    In fact, learn to cook at home, eat  at home, and have guests for dinner. Learn the pleasure of physical activity even if it's just a 20 minute walk.

    That's it—from my heart to yours. We all talk about change. I'm no exception, but I've learned to accept the fact that I'm not finished. I'm a work in progress, and I'm proud of that fact.

    Hurray for Home Projects

    Instead of posting the recipe I'd planned for today, I worked on cleaning out my office while Darling Hubby built another shelf in the pantry.

    I didn't finish my office work, but he did complete the new shelf. We have really high ceilings in our home, and the pantry had a top shelf about 6 feet from the floor which left a good 4 feet between the existing top shelf and the ceiling.

    Since I'm always in need of more storage, I convinced him to install another shelf above the top one. He went to Home Depot yesterday and today, he built another shelf that matches the others in the pantry!

    He did a great job. Then he went outside and cut all the roses in bloom since we're expecting a freeze tonight. What a sweetheart!

    A new pantry shelf and a bouquet of roses! What more could a woman want? Stay warm tonight!

    The NAUPA is the leading, trusted authority in unclaimed property.

    If there's any chance you, or a relative, had a bank account or owned property that was never claimed, you should visit the website.

    Enter the appropriate names or business names in all the data bases listed on the website. The instructions on how to conduct a search and what to do if you find unclaimed funds or property are on the home page.

    New properties are added daily so you can search immediately and check back whenever you wish.

    En Vogue Gift Suggestion for Women

    Ladies, if you're dropping hints about what you'd like Santa to bring you, may I suggest what I just while shopping on Amazon?

    I was looking for a couple of last minute gifts, when my attention was captured by these earrings. 

    They're something I probably won't find under the tree. They're also something I would never think to buy for myself if it wasn't Christmas because I have dozens and dozens of pairs of earrings.

    However, if my Santa doesn't take the hint in this blog, I think I'll order them myself. For me. After all, I've been a really good girl this year so I deserve an awesome gift from Santa. Right?

    Huggie Hoop Earrings by Ana Luisa Eden. These really caught my attention because they're different from the usual hoop earrings of which I have a few pair. 

    You can choose 14K Gold Plated as shown at right. A slightly less expensive pair of "gold" ones come with 2 "rows" rather than the 3 "rows" seen her.

    You can also get them with Silver Rhodium Plated.  

    The earrings are Hypoallergenic, Water-Resistant, and Tarnish-Free. The stones are Cubic Zirconia (what did you expect at this price point?).


    They're not what would be classed as "fine jewelry" but they are distinctive with a nice contemporary look. They'd probably go with any outfit, and I think they look far more expensive than the price  you'd pay for them.
