Monday Magic - Rewire Your Brain

Today's Monday Magic Tip is a little different. Instead of telling you about an app that may make your work life easier, I'm going to tell you about a YouTube video that may do the same.

I'm always urging SlingWords readers to keep a journal, to write your goals, to write an action items list, etc. even though I know many of you never put pen to paper in this digital world.

You make lists on your smartphone or a web app.

Guess what? There's sound science behind writing with pen and paper. Watch this video on The Upgrade with Makai Allbert channel which has over 42K subscribers. 

His video Handwriting Literally Rewires Your Brain has well over 2K comments, but what I like is the explanation of the science behind the premise. If you don't believe me, try it for a couple of weeks. I think you'll be shocked at how much you remember when making notes with handwriting and how much clearer your thinking is.

Memories of Mom, a WW2 Beauty

I think of my Mom often, not just on Mother's Day. She had a remarkable life which is detailed in her memoir which I edited and published, MEMORY LANE: MY SENTIMENTAL JOURNEY.

Mom was born during the Roaring Twenties. Her life experience living in rural Louisiana was vastly different from someone living in a city. 

Here are some random thoughts about her and her life as they have popped into my mind this morning.

GREAT DEPRESSION

When the great Depression hit, she remembers how her mother would save anything left from a meal to feed the men who traveled the country, looking for work. They'd knock on the back door, and she'd givc the men whom people called hobos who rode the rails whatever she could scrounge up.

LIPSTICK

She never left the house without her lipstick. She came of age when red lipstick was what all the women wore. Although she changed lipstick shades with the passing years, she still made sure she had her lipstick on when she went to town.

BOOKS

She always had a book she was reading. Subconsciously, that must have been why I was an early reader who discovered the magic of reading. She never got rid of a book she bought. I have most of her collection now.

HAIR STYLES

My mother had beautiful dark brown hair with an auburn cast to it. Unlike many of her contemporaries, she didn't "bob" her hair until she married. She used bobby pins to secure finger waves and curls each night.

ROSIE THE RIVETER HAD NOTHING ON MY MOM

Like many women, when the country went to war, she went to work—in a factory that made cannon shells. Many of her friends worked there and so did men who had been rejected for armed service for one reason or another. 

She, like the other girls, fixed their hair, put on their lipstick, and dressed nicely to report each day for work. She never thought her "war service" was anything out of the ordinary. It was just something she did out of patriotism.

SKIN CARE

I can remember very few times when my mom didn't "cream" her face at night to remove her makeup. She used Pond's Face Cream, slathered it on, wiped it off with Kleenex, and blotted with a warm wash cloth to remove any greasy residue. Then came her nightly moisturizer before bed. When she passed at 83, her skin was still beautiful—soft and lustrous. Sure she had wrinkles, but the texture of her skin was amazing.

FAMILY

Family and family histories meant everything to her. Her father lived to be 100, and she knew all the family truths and legends. She wrote 4 books on family genealogy that are in the collections of the NY Public Library, the Mormom Library in Utah, and in other public libraries. 

Sadly, all of those have been pirated and posted online over the years without any attribution to her. When that first started, she was so sad. She respected copyright and was shocked that many people didn't.

She wanted me to do something about it, but there was little that could be done. She'd really be upset to know how often books are pirated in today's world.

FOOD

She was an amazing home chef. Every week she made a cake. That's why I wrote a cake recipe book and called it FRIDAY IS CAKE DAY. Much of what I cook came from her recipes. Yet, none of it ever matches my memory of the taste of her food. I think hers always tasted better, but I guess that's just sentimentality.

RELIGION

Like her parents, my mother was christened in the Methodist Church. Her great grandfather's brother had been a Methodist Circuit Rider so the family religion was Methodist. Later, my Dad persuaded her to change to Baptist, but she was at home in many churches from Catholic to Pentecostal. I think she believed like her dad that religious affiliation wasn't checked at the door to Heaven.

MOVIES and MUSIC

The movies inspired the styles for hair, makeup, and fashion. Big Band music was the soundtrack of everyone's life in that era. My mom's favorite was Glenn Miller. She had his 4 record volume and played it often.

I grew up listening to that music of her teen years. Later, she loved all of the early rock and roll music and played it often. It wasn't unusual to get a call from her and hear her say, "I've been dancing on the porch to Jerry Lee Lewis."

Tap dancing, jitter bug, romantic comedy with Fred Astaire, Ginger Rogers, Cary Grant, Clark Gable, Claudette Colbert, and all the other famous movie stars provided the entertainment for America. My mom loved it all and never lost her fascination for those stars who became part of the war effort.

MEMORABLE DAYS

The Martians Are Attacking

She was a child when the radio show "War of the Worlds" starring Orson Welles was broadcast. The radio in her home was broken so she didn't hear the broadcast. The next day when she went to school, the other kids was talking about. Everyone was afraid. Apparently, they had missed the introduction to the radio show that said it was a story by H. G. Wells. She was terrified and rushed home. Her father told her it wasn't true. No Martians were attacking. That fear stayed with her for the rest of her life. She hated science fiction and refused to read or watch it in movies or TV.

Pearl Harbor

Mom lived in a rural area with only a very small town nearby. They subscribed to the daily newspaper, but that was old news by the time it was delivered. Everyone received news on their home radio.When news of the attack on Pearl Harbor came, everyone checked their hunting rifles and shotguns—making ready to defend their families and their homes. She said everyone was scared but patriotic and had faith that the President would set things to rights. She heard Franklin Roosevelt's impassioned speech about Pearl Harbor, after which boys just out of high school and those who hadn't yet graduated were signing up for the army.

Rationing

Nearly everything was rationed—sugar, meat, tires, gasoline, coffee, butter, shoes, and processed foods. Every family had a raion book. Women rallied to the task of "making do" with what was available. My mom learned to make things like Tomato Gravy over rice, pilchard (a canned fish similar to sardines) gravy over rice, and cakes made without eggs, butter, sugar that tasted amazing.

The End of War

When the war ended, everything changed again. The soldiers came home. No more rationing. No more job working for the war effort. My mom was suddenly unemployed because the returning soldiers needed jobs. She went to work as a telephone operator. She was one of those at a switchboard at the telephone company who would respond to a ring on the switchboard and answer with, "Number please."

You see, back in those days, there were no touch tone phones and most of the country did not have dial phones. The operator used a board with plugs and wires that would connect one caller to another. In fact, may people did not have private phone lines. They had party lines with several people sharing the same phone line. Each person had a different ring, i.e. one person's phone might ring twice and repeat. Another's might ring four times. Etc.

She loved her job and ended up working switchboard at various times thorugh the 1960s when switchboards were done away with.

My Mom was a beauty, a hard-worker, a survivor, and the smartest woman I ever knew. I love her—present tense, not past tense because love is everlasting. If your mom is still with you, cherish her.

Saturday Share Recipe - Velouté Sauce

Last Saturday, I shared a recipe for Chicken Cutlets and also gave you a recipe for Mushroom Sauce. I  promised to post a recipe for Velouté Sauce today.

In case you don't know what Velouté Sauce is, here's a tiny bit of history.

Velouté sauce was created in France in the 17th century during the reign of King Louis XIV.

It's called one of the five French "mother sauces" codified by chefs in the 19th and early 20th centuries.

Velouté is a word that means velvety in French, and that describes the texture of the sauce itself.

By the way, I always use unsalted butter since I prefer to add the salt so I know how much is in the recipe. You can use salted butter if that's what you have.

Velouté sauce is made using a blonde roux and light stock like chicken. So let's make Velouté Sauce today. It's very easy so don't be intimidated, and it's very delicious served with chicken.

Velouté Sauce

Ingredients

3 tablespoons unsalted butter 

3 tablespoons AP flour 

2 cups good chicken stock

Directions

  1. In a saucepan, melt the butter over low.
  2. Add the flour and whisk until well blended.
  3. Cook for 2 minutes over low heat. Don't brown the flour.
  4. Add the chicken stock slowly, whisking to incorporate.
  5. Simmer for 30 minutes until the sauce has thickened.
  6. The sauce should be a very light yellow or ivory color.
  7. Adjust the seasoning (salt) if needed.
  8. Store the sauce in a glass container with a lid (a Mason jar works great) in the fridge. When you want to serve it, warm gently over low heat.

Review - Happiness for Beginners - Netflix

This 2023 romantic comedy seems to be a quiet little film, but don't be fooled. It's compelling in every way even though it's not a rip-roaring, laugh out loud, romcom.

The movie, based on a 2015 novel of the same name by Katherine Center, features some popular romance  tropes—grouchy vs. sunshine, enemies to lovers, fish out of water, opposites attract, age-gap romance, and brother's best friend as hero—but it is subtle, not blatant.

The characters are fully realized. Luke Grimes of Yellowstone and Marshals is Jake, a man with an optimism that's ingrained in his personality. He's nice in the best way possible, and everyone likes him.

Ellie Kemper is Helen, a recently divorced 30-something who's standoffish and unhappy in a way that makes you think she probably doesn't know how to be happy.

These two end up on a guided hiking trip in the Appalacians, and Helen isn't happy that Jake, her brother's best friend, has horned in on her vacation.

ABOUT THE FILM

Happiness for Beginners, the novel, was adapted for the 2023 movie and directed by Vicky Wight. The film was released by Netflix on July 27, 2023 and is still streaming on that platform.

The movie was produced by Geoff Linville, Vicky Wight, and Barry Meyerowitz with Cinematography by Daniel Vecchione , Film Editing by Suzanne Spangler, and Music by Sherri Chung.

The other cast members are: Nico Santos as Hugh, Blythe Danner as Gigi, Ben Cook as Beckett, Shayvawn Webster as Windy, Julia Shiplett as Sue, Gus Birney as Kaylee, Esteban Benito as Mason, Alexander Koch as Duncan, and Mary Neely as Lulu.

Yes, today is Star Wars Day. If you ever wondered how this pun captured May 4th, here's an explanation.

May the 4th be with you originated with an advertisement taken out by the UK's Conservative Party in the London Evening News on May 4, 1979.

The phrase was used to congratulate Margaret Thatcher on becoming Prime Minister. The ad read: "May the Fourth Be With You, Maggie. Congratulations."

Given the popularity of the Star Wars movies, the phrase captured everyone's imagination and spread like wildfire.

Saturday Share Recipe - Chicken Cutlets and Mushroom Sauce

Apparently, chicken is the most popular "meat" for America according to what I read.

The sad truth is that it's difficult to take the boneless, skinless chicken sold in most markets and make it succulent and juicy.

Too many cooks overcook chicken and end up with an entree that's dry and not very tasty. Timing is everything.

Here's a recipe that's easy with a precise cooking time. Let's make Chicken Cutlets today. These can be servced with your favorite sauce.

Today I'll give you the recipe for Mushroom Sauce, and next week I'll post the recipe for Veloute Sauce. You can make the sauce in advance and keep it warm in a double boiler over simmering water or on a warming plate. The recipe comes together in about 30 minutes.

CHICKEN CUTLETS WITH MUSHROOM SAUCE

Ingredients

  • 1 1/2 pounds boneless chicken breasts (should be enough to serve 6)
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup AP flour
  • 1 cup Panko Seasoned bread crumbs (if you use plain breadcrumbs, add 1 teaspoon salt, 1 teaspoon Italian herbs, and 1/4 teaspoon ground black pepper and mix well)
  • 1/4 cup neutral cooking oil

Directions

  1. Preheat oven to 350°F  (180°C)
  2. Wash and pat dry the chicken breasts.
  3. Flatten each chicken breast onto cutlets that are the same thickness.
  4. In a dish, beat the eggs, add the milk, and blend well.
  5. Dip each cutlet into the flour, then into the egg mixture, and then press into the bread crumbs.
  6. Heat the oil in a large skillet and fry each cutlet until golden brown on each side.
  7. Place the fried cutlets onto a baking sheet.
  8. Bake for only 10 minutes. Remove and serve with your chosen sauce.
  9. If you didn't make the sauce in advance, place the cutlets on a warming plate but don't cover them with foil or anything that makes condensation form. You want the crispy outside to remain crispy.

MUSHROOM SAUCE

Ingredients

  • 1 1/2 cups sliced baby bella mushrooms (often called crimini), prepped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/4 cups chicken broth
  • 1 1/4 cups half and half cream
  • 1/2 cup grated Parmesan cheese (Freshly grated is best, but you can use the powdery stuff.)
  1. Heat the butter in a saucepan then add the sliced mushrooms. Saute until tender.
  2. When tender, sprinkle the flour over the mushrooms.
  3. Lower the heat a bit and cook for 2-3 minutes.
  4. Stir in the broth and the cream, blending well.
  5. Reduce the heat again and simmer the sauce until thickened.
  6. Stire in the cheese and simmer 2-3 more minutes until the cheese melts.
  7. If you made this first, keep the sauce warm by placing in a double boiler over boiling water or on a warming plate.

Wednesday Wise Words - Time

Today's quote is by Harvey Mackay, an American businessman, author, and syndicated columnist with Universal Uclick for which he gives career and inspirational advice.

You've probably heard or read his most famous book, How to Swim With the Sharks Without Being Eaten Alive.

One of the secrets of success is learning how to use your allotted time each day rather than frittering it away on unimportantmportant tasks.

Mr. Mackay is 94 now so he definitely knows the importance of using time effectively. Here's what he said.

"Time is free, but it's priceless. You can't own it, but you can use it. You can't keep it, but you can spend it. Once you've lost it, you can never get it back."

Like money, time is something you can't take with you when you die. When you're living, time is more important than money because yo can always make more money, but you can't make more time.

Review - Everest - Netflix

For several months, I've foound very little of interest on the streaming services. It's times like this that I question why I'm paying so much for so few well-written, well-crafted movies and TV series.

In fact, the only streaming service I don't complain about is YouTube Premium because it's an excellent research source for writing. But Netflix, HBO Max, and Prime since they started ads? I could easily jettison them, but I'll probably keep Prime because Amazon is a primary shopping destination for us.

Indeed, it seems as if the older movies and TV shows are so much better than the movies and TV since 2020. A case in point is the movie EVEREST, a 2015 movie based on the true story of the 1996 Mount Everest disaster.

I remember seeing this several years ago. I didn't remember the complete details of the production so I thought I'd watch it again.

The story is about the 2 rival expedition groups that attempted to reach the summit only to find their lives at stake when a massive storm struck.

Starring Jason Clarke, Jake Gyllenhaal, Josh Brolin, John Hawkes, Robin Wright, Michael Kelly, Sam Worthington, Keira Knightley, Martin Henderson, and Emily Watson, the movie is edge of the seat suspense. 

This high drama film is suspenseful and ultimately heart breaking as it tells the story of the ill-fated expeditions. Eight climbers died. Several had to undergo amputations. The horror of it makes one wonder why anyone wants to attempt Mount Everest climbs.

MONDAY MAGIC - ANOTHER CYBER SECURITY TIP

Welcome back to Monday Magic. Today I'm offering some more Cyber Security Tips.

Previously, I posted CYBER SECURITY TIP a couple of weeks ago if you want to check it out which I advise you to do because you need to take the action it explains.

If you receive a phone call from an unknown number, do 1 of 2 things. 

1. Answer but saying nothing, and make sure there is no noise in the room, just total silence. The caller may say, "Hello, is anyone there?" Do NOT answer. Do not say, "Yes."

After a few attempts, scammers who repeatedly call your number—probably purchased from the dark web on a list of 1000's from data breaches—will assume your number is out of service or not assigned. They'll remove it from their list and move on to another potential victim.

2. Again, say nothing. Follow the silence scenario above because if you DO say something and the call is from scammers, they will record anything you say. 

If you say, "Hello, yes, I'm here or yes, I can hear you," they will use your recorded YES to "prove" you agreed to whatever scam they are trying to perpetrate.

If you follow the silence routine, you'll notice that most of these scammers ask, "Can you hear me?" They want you to say, "Yes, I can hear you." Don't be a victim. Be silent.

SCARIER SCENARIO

If you say anything—like telling them where to go or cursing or any cutting remarks—they will be recording everything you say. They end up with a recording of your voice which they can then sell to anyone or any group they want, and they'll get paid for it. Those who purchase voice recordings will then use AI to market your voice, possibly to duplicate your voice and get paid for selling it.

EVEN SCARIER SCENARIO

They may use your voice in an extortion scheme. Example? Your son receives a phone call, "Honey, don't panic, but I've been kidnapped. You've got to access our bank account and send $50,000 to this routing number. Please, if you don't, they will kill me."

The crooks have a 50-50 chance that one of your kids may have access to your bank account. (Please read my previous post with a Cyber Security Tip

How on earth do people think up these horrible things to victimize people? Don't answer any phone call if you don't recognize the number. If it's your doctor or something equally important, they will leave a message. If you choose to answer, be silent in a silent room, and listen. After a few weeks, you may notice these calls decrease enormously.

Don't be a victim. Be smart. Be safe. Contact the FBI if you receive any kind of extortion attempt.

Time Keeps On Ticking Ticking

Lord Chesterfield famously said, "Know the true value of time; snatch, seize, and enjoy every moment of it. No idleness, no laziness, no procrastination: never put off till tomorrow what you can do today."

We all bemoan the lack of time to do everything we need to do and want to do, but ask yourself: how do I use my time?

Do you spend your allotted hours each day effectively or do you frivolously spend your hours in the purusit of entertainment?

 Everyone is given the same 24 hours a day. How do some people create success, prosperity, and happiness and others muddle along in a life full of discouragement?

Success starts with attitude, desire to live full of joy, belief in oneself, and learning to use time effectively. There are a million books, classes, videos, and lectures that teach one how to harness the potential inside. Believe.

Saturday Share - Chef Mama's Beef Stock

Who is Chef Mama? That would be my Mom who was an amazing home chef. She had family recipes, contemporary fad recipes, and cookbooks from churches as well as the most popular ones of her era.

She never watched a chef teach how to make something in a video or anything like that, but her food was amazing.

She made stock in her kitchen, and she didn't call it bone broth. It was called stock, and it smelled so good and tasted so good, you wanted to drink it.

Today, I want to tell you how she made beef stock to produce a liquid that would make gravies, sauces, and soups mouthwateringly delicious.

You'll need a roasting pan and a large stock pot or Dutch oven, and you'll need what were once called soup bones.

Mom used real beef trimmed from roasts as well as soup bones which could be bought for cents a pound. 

In today's world when short ribs cost $9.99 a pound, just look for the cheapest bone-in beef you can find. If you frequent a butcher shop, you can probably get soup bones from them.

You'll also need celery, onion, carrots, salt, and herbs. I do like my mother. When I cook with those vegetables, I wash and trim them then save the trimmings in a big container in the fridge for the sole purpose of making stock.

CHEF MAMA'S BEEF STOCK

Ingredients

  • 2 1/2 pounds meaty beef bones
  • 1/4 cup olive oil
  • 10 cups of cold tap water
  • the equivalent of 2 celery staoks, 2 carrots, 1 onion, all coarsely chopped
  • a bouquet garni which is usually a bundle of herbs placed in a cheesecloth square and tied together. Use 2 sprigs each of fresh thyme and marjoram, 6 black peppercorns, 6 sprigs fresh parsley, and  bay leaf.
  • 1 teaspoon of salt

  • Preheat oven to 350º F. (180º C.).
  •  Place the soup bones in a roasting pan and drizzle with the oil.
  • Bake for 1 hour or until the bones are well browned.
  • Remove from the oven and transfer everything to a Dutch oven or stock pot. Add the cold watr and all the other ingredients.
  • Turn the heat to high and bring everything to a boil.
  • Reduce the heat to a simmer and cook uncovered for 3-4 hours.
  • Skim any impurities that rise to the top of the simmering stock.
  • At the end of the cooking time, remove the soup bones. If there's any meat on them, reserve it for use later. Discard the bones.
  • Strain the stock throough cheesecloth or a fine sieve and discard the bouquet garni and veggies.
  • Chill at least 24 hours before using the stock.
  • Fat will accumulate on the top of the stock. You can scoop this fat off and use as you would use butter, shortening, or cooking oil. If the source of the bones was organic, this fat is very healthy. Saute vegetables in it, use to make roux, sauces, etc.

I make stock on a weekend. After it's chilled and I've removed the fat, I pour it into quart-sized freezer containers, mark the date, and stack the containers in the freezer so I'll always have this quality ingredient on hand.

Friday Facts About SlingWords

On April 12, 2005, I wrote and published the first post on SlingWords. It was a Japanese Proverb I learned when I lived in Japan.

Yes, I've been blogging for 21 years on SlingWords. Since that date 21 years ago, I've written and published 4,562 posts.

Wow! That even impresses me.

Once I blogged every day, but my life became so busy these last few years that I no longer had that luxury.

When I do blog, I put my best effort into the process. I do my own research, verify facts, select graphics to accompany each post, and try to make sure it's error-free.

Normally, I post this "birthday" blog on the anniversary date. This year, I've been inundated with too many projects which is why it's 2 weeks late.

Many people say blogs are dead, but I don't find that to be true. Blogging is alive and well and will continue to be so as far as I can see.

This is something we've had in our family for a couple of decades. Create a secret password that each member of your family can remember.

If that password is ever used in what seems like ordinary conversation, it means: "I'm in trouble. Call 911. Send help."

If you receive a late night phone call from one of your kids: "Help. I've been arrested. Wire $5000.00 for an attorney to SOME WEBSITE." If the call is really from one of your kids, he would say the password to verify it's really your child.

WHY IS ALL THIS IMPORTANT?

Because we live in a world where people put their real birthdates and private information on social media. They have their phones set so they can take calls from social media followers. 

They post pictures and videos of spouses, siblings, children, and grandchildren. They log their daily movements and restaurants they frequent, vacations they take, and so much more.

LET'S READ AN EXCERPT
(Warning: Language!!! Nick's a bad boy.)

I have it all, and it means absolutely nothing to me.
I can still feel the punch to the gut that was Zack’s returning to claim Zoe, just as I was about to seal the deal and make her mine. I can still smell the exact fragrance of the air when I stepped out onto the balcony, still hear my voice as I told her, “I can be whoever you want me to be, Zoe.”

What the hell was I thinking? I wasted eight years of my life on one woman. 

A woman not unlike B.J. McCaffrey, who was sitting across from me now, acting as opposing counsel. I looked at her. As drop-dead gorgeous as she was, she was just another woman. 

“Mr. Adams? Are we boring you?”

I could hear him somewhere on the edges of my thought, but it didn’t matter to me. Change myself. For a woman. Where was my pride? Where is my pride?

“Earth to Mr. Adams.”

I turned my head slowly to face the judge. He was a prick.

“Does the accused need another lawyer? Or are you going to continue to sit there and let him destroy himself on the stand?”

I looked at my client. He didn’t even wear a tie. “Yeah. I think I am.” 

At first, I couldn’t believe the words came out of my mouth. But they felt good. Felt right, somehow. “I’m sick of working my ass off on cases and having my clients ignore everything I tell them about their demeanor on the stand.”

Judge Walters looked at my rival, B.J. McCaffrey. She shrugged. “Mr. Adams. Your job is to defend this man. Are you incapable of doing that?”

“I don’t know.”

Again, the judge and my opponent exchanged a look.

Pull it together, Nick. Find that damn pride of yours. “Wait.” My eyes ricochetted around the desk in front of me and finally fell on the yellow legal pad with my scribbled notes for the case. “I apologize, Your Honor. It’s been a rough—”

Eight years? Two months? Life?

“—day. My apologies to the court.”

“I repeat, your job is to defend this man. Are you capable of doing that?”

Damn. I just apologized. Can’t you let it go?

I didn’t have the time or patience for the existential crisis I was going through, but it would have none of it. It was bound to torture me all the same. 

Of course, the reason for it was undoubtedly her. The woman I loved—or thought I loved—was on her honeymoon with my best friend. And I was beginning to see how crazy it had been for me to wait around eight years for her. 

As a result, I was approaching thirty and still didn’t know who I was. I straightened my back. This is what Zoe had brought me to. 

“Yes, Your Honor. It won’t happen again.”

“It better not, Mr. Adams, or you won’t see the inside of my courtroom again.”

Yeah, yeah. You’re in charge, big boy. We all get it.

“Now I’m going to do you a solid, Mr. Adams. It’s late. I’m—”

He likes to use slang. He thinks it makes him look cool. I managed to roll my eyes inwardly this time.

“—going to adjourn this court until one. I suggest you take the time to pull yourself together.” He looked at my client. The rail-thin, gray-haired, unshaven man sat with his mouth hanging open like a guppy. “You can get down now.” 

The man nodded and Walters pounded his gavel. He glared at me. “The court is adjourned.”

I gathered my things, cursing quietly.
